Popular as a 'fish n chip' fish, these versatile fish lend themselves to a variety of cooking methods including steaming, poaching, frying, baking and BBQ'ing. They are described in trade books as a superb table fishes with finely textured flesh. The use of a sauce or marinade will overcome the slightly dry texture sometimes evident in these fishes after cooking.
