Every piece of beef is evaluated by the CBGA and awarded shields and labels as such. Sterling Silver only uses the top ⅔ of all meat-grade AAA using these parameters. AAA beef is high quality, tender, juicy, and flavourful so you know you’ll get premium quality in every bite.

All Sterling Silver cuts have been wet-aged a minimum of 21 days to ensure the meat has had enough time to bring you a consistent, delicious product.

This cut is taken from the short loin section of the cow, which is located just behind the rib area and before the sirloin. The short loin is a tender, less-used muscle, making it ideal for steaks.

Striploin steaks are well-marbled, offering a balance of tenderness and flavor.
