New Zealand John Dory Fillet (Zeus faber) is true John Dory - not one of the inferior varieties of other unrelated Dories or fish often marketed fraudulently as John Dory in Hong Kong.
The flesh is pale, with a medium to firm texture. If the fish is being sold skinless or has skin without the the black 'fingerprint of St Peter' on each side of the fish - it's probably not true John Dory.
Storage: Keep frozen at -18°C or below.
