It is said that King Louis XI, attacked by a bear while hunting in the Vercors, was saved by two lumberjacks who gave him a taste of a Saint-Marcellin from the period to help him recover!
Tasting Notes: It has a golden colored rind with an ivory, creamy, and runny paste. The rind is strong and slightly shattered. In the mouth it gives a creamy and farmyard taste.
Pairing Suggestion: Well-aged, Saint-Marcellin is best enjoyed on a slice of farmhouse bread rubbed with garlic. It is also delicious in recipes such as ravioli or sauces to pair with salmon. Perfect pairing with a light red wine or a blond beer.
