Piccante (Spicy) Gorgonzola has a harder paste with a more intense and widespread blue-green marbling. The taste is strong and piccante (very spicy) due to a longer maturation period of at least 80 days.
IGOR Gorgonzola cheese is certified ‘naturally lactose free’ by the Italian lactose-intolerant Association (AILI), and is until today the only PDO cheese to have obtained this important certification.
