This summer's star product, burrata, can be enjoyed on its own with a simple drizzle of olive oil, basil, salt and pepper, or as an accompaniment to a green salad, fresh pasta or pizza. However, this cheese cannot be cooked, so add it at the last minute to the dish you wish to enjoy.
The Burrata, is a specialty of the Puglia region of Italy (heel of the Italian boot). The older mozzarella were stretched and mixed with cream to obtain a paste called Stracciatella. A small mozzarella pancake was filled with this mixture, then closed with a leaf slipped into the knot, proof of freshness if it remained green! Nowadays, it is more and more sought after, especially during summer!
