Purple-red in the lean portion and shiny in the fatty portion. Uniform when cut. Delicate, slightly salty, pleasant, with no off-flavors.
It can serve as a cold appetizer with cheese, nuts, cantaloupe, figs, etc., or with salads or grilled vegetables.
