All Sterling Silver cuts have wet-aged a minimum of 21 days to ensure the meat has had enough time to bring you a consistent, delicious product.
This cut is taken from the short loin section of the cow, which is located just behind the rib area and before the sirloin. The short loin is a tender, less-used muscle, making it ideal for steaks.
Striploin steaks are well-marbled, offering a balance of tenderness and flavor.
