Smoked with a traditional method, we use a mix of different wood and cold smoke. The cheeses stay in the smoker for 18 hours, allowing them to absorb all the wood aromas to reveal a subtle smoke flavor. Cut into small cubes, the Fumaison proves to be very well appreciated as an appetizer!
This cheese has a natural type of rind, a straw yellow paste with small holes, thick texture with a soft taste, a bit animal with a smoky finale
