A cone-shaped muscle separated from the ridge of the shoulder blade and close to the meat of the shoulder blade. Rich in fiber, thick and chewy, so it is durable in cooking.
It is often used in Chinese stir-fry, pan-fried, stewed or other creative dishes. It can also be used in making beef jerky, it is often sliced and diced in Western cuisine and used in side dishes.
