Australian Borrowdale Free Range Boneless Pork Leg Rind on (for crackling). This is essentially a raw ham mini roast.
It's sourced from Royal Society For The Prevention of Cruelty To Animals (RSPCA) approved farm, and no moisture infusion.
Pork Leg is one of the leaner roasting joints. There’s a layer of fat under the skin, which will melt and ‘baste’ the meat as it cooks, helping to prevent it from becoming dry, but you can also add a little water to the roasting tin.
