Iberian pigs are found only in the Iberian Peninsula in both Spain and Portugal. This breed is historical, tracing back over 12,000 years. Unique genetic, sustainable farming model, natural feeding, and the habitat “Dehesa” result in the jewel of the Spanish gastronomy: Ibérico pork, the highest quality pork meat in the world.
Iberico breeds give meat a greater infiltration of fat. This fat appears in the form of white or pinkish streaks that cut through the meat. This results in a more intense and characteristic flavour.
Iberico pork has just 9% fat, like chicken breast, with the one difference being that this particular fat is oleic acid, which helps reduce cholesterol.
