The Beaufort is historically a high mountain cheese, which explains its concave shape, once used to adjust a rope around it to carry the cheeses upon mule’s backs while travelling.

Tasting Notes: White ivory paste, thick at first, quickly becomes buttery. Rich and fruity, butter, cream, fresh grass and hazelnut. Nice aromatic persistence on the palate, rich, spicy and buttery.
Pairing Suggestion: Diced, sliced or shredded, hot or cold, this cheese is perfect for snacks, aperitifs, picnic sandwiches, soups, salads, omelettes, gratins, pies and many other dishes. And let's not forget the famous Savoyard fondue, which can be made entirely with Beaufort!
