An exceptional cheese! Only 72 families still have the privilege of producing this formidable cheese in the Pays d'Enhaut, a mountainous area on the eastern shore of Lake Geneva. The rich milk from cows fed on the flower-filled slopes is processed daily in large copper cauldrons heated only over wood fires, a process that requires a great deal of experience.
Tasting Notes: It has a brown rind, a dense and ivory to yellow paste with many white crystals. Crunchy but buttery with scents of wild berries (blueberry, blackberry), warm brioche. Explosive in the mouth with cooked butter aromas.
Pairing Suggestion: Étivaz, an exceptional Swiss cheese, will reveal all its richness and character whether on a platter or melted into dishes such as scrambled eggs, pasta in sauce, or in a 100% Étivaz fondue.
