Diced, sliced or shredded, hot or cold, this cheese is perfect for snacks, aperitifs, picnic sandwiches, soups, salads, omelettes, gratins, pies and many other dishes. And let's not forget the famous Savoyard fondue, which can be made entirely with Beaufort!
The Beaufort is historically a high mountain cheese, which explains its concave shape, once used to adjust a rope around it to carry the cheeses upon mule’s backs while travelling. It was mostly produced during summer by gathering the herds on high meadows. We can go back to the 13th century to find tracks of this trade between Savoie mountains and Turin. We now select the best wheels and we take care of the aging at the “Tunel de la Collonge” (an old railway tunnel) for long months.
Tasting Notes: On the nose it has a rich and fruity scent with hints of butter, cream, fresh grass and hazelnut. Nice aromatic persistence, rich, spicy and buttery in the mouth.
Pairing Suggestion: Dry white wine (Savoie / Jura), Blond beer
