In Provence, Mons has chosen to work with a collective of producers, all committed to preserving the local breed: the Rove goat. From Mouriès to Simiane-la-Rotonde, from the Alpilles to the Provencal Colorado, Mons works with 5 producers throughout the season to produce these jewels.
Tasting Notes: Slightly wrinkled white rind with a white paste. It has a herbal and savory smell with an herbaceous, subtly caprine and fresh milk taste.
