Since the 14th century in Haute-Savoie, farmers paid their landlords according to the amount of milk produced. On inspection days, they deliberately under-milked their cows. Once the inspector left, they milked again and used the richer milk to make a cheese—hence the name Reblochon, from the French «re-blocher» (to milk again).
Tasting Notes: It has an orange to yellow rind covered by a white fluff, with a smooth ivory paste. Smell of butter and raw milk, barn, leather and offers a buttered cream, slightly salted taste.
