White bloomy rind, more or less thick, white and thick grained paste, and a creamier layer under the rind. The heart of the cheese melts in the mouth. It has smell of Paris’ mushrooms on the rind, fresh milk, yogurt, and butter inside. Slight mushrooms, then very fresh on the palate.

Perfect pairing with rosé wine (Côteaux d'Aix), fruity red wine (Bourgueuil), Champagne or a white Beer
